So I started my gluten-free diet today. Since I haven't been shopping yet for gluten-free products, it was somewhat difficult to find food to eat.
Breakfast:
Yoplait strawberry yogurt
walnuts
Lunch:
Baked chicken breast
peas
brown rice
I drank water all day - this is going to be the hardest. I'm going to miss my Coke. LOVE it! But there is some question as to the caramel coloring used and I'm going to exclude it from my diet until I am better. It will be the first thing I add back in for a trial, though!
But we're going to bring the diet to a screeching halt for right now! I'm working on getting a GI consult and I'm not supposed to change my diet before I see them...it could affect any testing that I might need. I'm hoping for an appointment in the next couple weeks. If it's going to be longer than that, then I will go ahead with the gluten-free diet because I'm ready to feel better. NOW.
